STORY

Pecorinos are one of the most produced and recognizable Italian cheeses throughout not just Europe, but well beyond the European borders into the rest of the world. Each Italian region can be characterized by its other flagship cheeses, but Pecorino is the one cheese that almost all regions have in common. It is produced from the North to the South in numerous different fashions.

Pecorino S. fits perfectly into a uniquely curated Ciresa selection, composed of the most intense and genuine cheeses that follow the ancient, cheesemaking traditions of the past. With an aromatic flavor, yet still gentle on the palate, it is a versatile cheese, which can be appreciated by all kind of consumers. It is a dense cheese, with a white-straw colored paste, aged for a minimum of three months, with an oiled rind. It expresses its authentic character if all on its own, but lends well to pairings too, particularly with cured meats.

Their work includes selection, aging, packaging, and distribution of cheese, particularly the traditional cheese families of Lombardia: Stracchino, Gorgonzola, Latteria & fresh cheese.
