STORY
Marmori—or Marble in Finnish –is a new creation from Peter Doric in Finland. Inspired by a project with the Finnish National Hockey team and the natural birch trees in Finland, Dorig uses vegetable ash for two batches of curds before mixing and pressing them together. The result is a distinctly marbled appearance while the overall style mimics some of the Appenzellar and Emmentaler styles of his other cheeses.
With a slightly firmer texture and rustic black rind, this cheese reflects the quality of the milk in its flavor profile and adds a more earthy and sweet cheese to the already delicious lineup.
Peter Dorig grew up surrounded by cheese in Switzerland as the son of a master cheesemaker. Following in his footsteps, Peter learned the craft of cheesemaking before exploring the world as a transcontinental truck driver delivering goods from Europe to the Middle East. After journeying across the world, Peter found himself settling down in Finland where he would meet his wife Jenni.
After living in Finland for some years, learning the language and starting a family, Peter found himself missing the quality of cheese he was accustomed to in Switzerland. Thus, and idea was born and with the help of his wife Peter began making cheeses in a small village creamery. Fast forward 16 years and many awards later, Herkuujustolawas born in the new facility in Sastamala where Peter and the team make and process all their cheeses from a single herd of cows from an 18 generation dairy only 15 minutes away.
