  • Chalet Brenleires: Dense and smooth texture, slight grainy finish. Flavors of cured meat, broth, roasted nuts and mild smoky finish.
  • Chalet Moesettaz: Firm and toothsome texture, slightly mealy. Flavors of braised meat, peppercorns, toasted nuts, mild fruity aromas.
  • Chalet Jeux de Quilles: Dense and smooth texture, mild granularity. Flavors are bright, lactic, tropical fruit, brown butter, broth and herbal finish.

STORY

The Alpageproduction site at dairy Chenauincludes five chalets, their time of use depending on the seasonal stage. The oldest of these chalets was built in 1686 and is the oldest building of its kind in Canton Fribourg.

No electricity on site; a generator is used for milking. Each May in the AlpageGruyere production zone in Western Switzerland, small groups of farmers and cheesemakers practice transhumance, leading their cows high into the mountains from their surrounding valleys.

These groups move from various chalets throughout the summer, moving higher and higher until their descent in the early fall. The cows’ foraging of local flora is a crucial practice for maintaining the Alpine landscape.

Fromage Gruyere S.A. is the smallest public Gruyere affineur and the only one in the canton of Fribourg, the birthplace of Gruyere, Fromage Gruyere SA was founded by the landowners of the Alpine pasture in 1916 and remains dedicated to intensive selection and aging of Gruyere in its ancestral homeland.

THE PERFECT BITE

Sweet and tangy mustard and cornichon cuts through the densely rich paste while the smoked polish sausage adds additional earthy and savory overtone.
