Red Devil

Red Devil draws its name from local Toggenburg folklore dating back hundreds of years.  Locals believed a cave nearby to the dairy was inhabited by the devil himself.  Nobody dared to enter or approach the cave, but thankfully no devil has ever been found to this day.

With this cheese, Reto once again finds inspiration from Appenzeller.  Red devil is a spicy, slightly strong cheese and impresses with its creamy texture, despite the six-month ripening period.
