Located just north of Ciudad Real in a small town called Herencia, lies the dairy Quesos Iniesta Manzanaro. Currently managed by the third generation of the family, Felix Iniesta, their focus is on hand crafted sheep’s milk cheeses. Drawing milk from their own heard of La Mancha sheep, as well as from neighbors around them, Felix continues to craft traditional cheeses like his family before him, while also helping to modernize the dairy by incorporating new cheese making technology. We look to Quesos Iniesta as a source for well known, Spanish sheep’s milk cheeses.
