Ostenfelder Meierei is located in the dairy rich region of Germany, Schleswig-Holstein, where over 80% of farms raise livestock, two-thirds of which are for dairy. This dairy is perhaps one of the smallest in the region, originally comprised of a group of farmers who formed this cooperative dairy in 1887. Today, it is run by cheesemaker Hauke Koll and his family. Hauke is a native to Schleswig-Holstein, and after traveling through Europe working in different dairies, he decided it was time to return home and craft his product. It is here he’s able to make cheese according to his standards, focusing on a hands-on approach a choosing to produce smaller volume in order to achieve this.
