Roquefort is one of the most recognizable blue cheeses in the world with written record of the cheese dating back to the first century. In 1924 it became the first French cheese to receive AOC status, dictating that production of Roquefort could only occur within the region of Roquefort-sur-Soulzon. Today, there are only seven remaining producers of Roquefort, with one of those producers accounting for 60% of all production.
The smallest producer and the one we choose to work with is Maison Carles, founded in 1927. Delphine Carles is the third generation of the Carles family to run the company. She continues to carry on the tradition of producing a truly artisanal Roquefort just as her father and grandfather before her.
