Käserei Neuwies existence dates back all the way to 1894, serving as a traditional Alpine village dairy. Many farmers in Toggenburg, the area where the dairy is located, decided it would be best to process their milk together, rather than separately. Since then, the dairy has been managed by a few different owners, most recently Philip Müller who came to the dairy in 2007. Focusing mostly on Tilsiter production, Philip has helped continue the modernization and expansion of the dairy. Twice each day, he receives milk from 17 farmers, ensuring the quality and freshness he desires for cheesemaking. With decades of experience in dairies across Switzerland, Philip Müller has fine-tuned his craft and is now able to produce his own original creations at his home in Käserei Neuwies.
