Gruyère d’Alpage, Tsermon

Gruyere d’ Alpage Tsermon is produced in three different chalets that are nestled right next to the magnificent Moléson, overlooking the village of Gruyère.  Alexandre Murith has been producing Gruyère side by side with his father Jacques for years, and is now the sole cheesemaker.

Since they are one of the closest Alpage producers to the village of Gruyère, most of their wheels end up being sold nearby. Of all the producers we work with, typically Tsermon has the least availability . Their wheels also tend to possess a more smokey quality, as their chalets are smaller than most others, causing more smoke build up during production.

For 2019, wheels from Tsermon have a wonderfully rounded flavor.  Fresh lactic notes upfront, are quickly taken over by a brothy, umami quality brought on by good salt levels. Meaty notes transition to fruitier, apple tones and acidity. Tyrosine crystals are studded throughout the paste giving a great texture break to the soft, creamy paste.
