Gruyère d’Alpage Guedères

Gruyère d’Alpage Guedères originally was made at two chalets.  In the early 1990’s unfortunately, these sites were lost to fire caused by a military training exercise.  A new chalet was rebuilt, making it one of the more modern alpage dairies, using materials like cement and tiles in construction instead of wood. However, to this day, there is still no electricity on site with only a generator used for milking. 

Michel Mauron had been the cheesemaker here up until two years ago. His son Patrick is now in charge of production.  Guedères has become one of favorite our producers, consistently making some of the best Alpage Gruyère each year.

2019 was no different for Guedères. The wheels have a bold animal, barnyard quality that is known for Alpage wheels of Gruyère.  Strong umami, bone broth notes are abound, washed over by a fruity acidity.  A lingering brininess leaves you craving more of this batch
