The Alpage production site at dairy Chenau includes five chalets, their time of use depending on the seasonal stage. The oldest of these chalets was built in 1686 and is the oldest building of its kind in Canton Fribourg. No electricity on site; a generator is used for milking.

The Alpage season in 2019 produced less than ideal conditions for the pastures. Hotter and drier weather meant less feed for the cows, and a shorter season. This didn’t stop the father and son cheesemaking team at Chenau however , as they were able to tweak their production to make sure their wheels had sufficient moisture. This allowed their cheese develop flavor more quickly.

The cheese this year maintains a mild barnyard quality, with just a touch of smoke. More umami upfront with notes of chicken broth, the cheese finishes with a nice acidity reminiscent of fall apples and pears.
