Granja Cantagrullas is the center of operations for Quesería Cultivo, located just Northwest of Madrid in the small village of Ramiro. Established by head cheesemaker and partner in Cultivo Rubén Valbuena in 2014 as a way to provide new and unique cheeses for local restaurants. After studying cheesemaking in France, Rubén has created by request dozens of different cheeses at his dairy, utilizing sheep’s milk from neighboring farms. Not only does Rubén make his own cheese to provide for Cultivo, but he has also helped create and manage their affinage program as well. Dedicating an entire cave space for other Spanish cheeses that come to his dairy, Rubén maintains and cares for these cheeses as they mature. Granja Cantagrullas is an integral part to Quesería Cultivo and continues to help evolve the cheese industry in Spain.
