The view from Fromagerie d’Alpage Chenau is real

The view from Fromagerie d’Alpage Chenau is really something. The Boschung family produces Alpage Gruyére at five different chalets in total, all located on the mountain Dent de Lys. One of these five chalets was built all the way back in 1686, making it the oldest building of its kind in the canton of Fribourg!

While the 2019 season was quite dry and hot, the family of cheesemakers here were able to tweak their production in order to get the most out of their wheels. Heavy umami notes up front, think brothy chicken stock, are balanced out by an acidic finish reminiscent of Fall apples and pears. Light smokey notes from the open fire in which the cheese is prepared over are also present.
