Tucked away in the secluded mountain village of Sibratsgfäll in Western Austria, lies Dorfsennerei Sibratsgfäll. This cooperative dairy was founded in 1907 by the local farmers of the area, originally basing their production in Emmenthaler. They began to shift their focus away from Emmenthaler in 1973, and instead began making traditional Bergkase. In 2005, a soft cheese dairy was added to help diversify their production. Today, twenty farmers total contribute their milk from Brown Swiss guys that graze in the surrounding alpine mountain pastures. The dairy allows us to source some fine examples of traditional Austrian alpine cheeses that we’re happy to have in our portfolio.
