Bachensteiner is a modern Austrian creation rooted in traditional history.  In the early 1970s, a demand for a smaller format version of the classic German washed rind cheese Backsteiner increased.  Cheesemakers responded by creating a grab and go friendly format in Bachensteiner, which became quite popular in supermarkets in Eastern Europe.  In 2005, Dorfsennerei Sibratsgfäll constructed a soft cheese production room, in order to produce their own version of Bachensteiner, but employing a more artisanal approach using their amazing, local hay milk.  The cheese is pudgy and almost pudding like in texture towards the center.  The flavor is surprisingly approachable for its style, with a very buttery profile with undertones of spring onions.
